Today I have been making eggplant pickles.

Before my husband died, I bought the appetizers at the markets and was happy with good cheeses, big olives and all sorts of nuts.
After my husband died I did some math and decided to learn to make other appetizers that would mean less expense but would be as good. I learned to make pickles (as this one I just made), hummus, babaganouche, capapes, tiny sandwiches and guacamole.
Today I used one eggplant I had to make eggplan pickle. Once my mom took me to a very elegant restaurant and they had this same thing with another name. I asked my mom to buy it so that I would learn something else. And discovered that the only difference from my pickles was the name (aubergnine caviar) and the price (only for the pockets of the very rich).
I will have this on Sunday with crakers as part of the yummy things. Anita helped me a lot with the dicing of onions and eggplants.

@AmbiePam I will entertain her at my house. She does not have help to clean up for her later and she can´t do it well. Here I have a good kitchen and Dixie will help me as she knows where everything is here.

How interesting. I hadn't heard of those things. I mix up my own appetizers. Can't say I make them from scratch. I like to eat such things since there are many things I can't eat now with out teeth.

I make now sweet and salty appetizers. Many are dips that don´t need teeth to eat them.

I love eggplants but never tried eggplant pickles. I usually cook eggplants with minced pork or stuffed with fish paste.

I love eggplants. I make moussaka, stews with eggplants in them but also escalivadas and pickles.
