In bengal in the countryside huge acres of land are devoted to mustard plantations. As mustard is used as edible oil for cooking purposes there is huge demand for mustard. The yellow coloured mustard fields look beautiful. India exports mustard oil abroad also.

That's the oil that I use for most of my cooking. Yesterday I made some sarso ka saag( mustard leaves) with palak and other greens. I made makki roti with it. An ideal dinner for winters.

thanks Arunimaji every dish of yours make my mouth water. I love sarson da saak. My wife and mother cook fish curries with mustard oil. They taste very good. Regarding roti I love all the varities. We mostly have gehu the wheat flour, but love jowar, bajra and makka

@sathviksouvik . A perfect one for this gloomy season when you can enjoy ghee in generous . I have made enough saag to last for couple of days. It's a laborious work to clean the greens and chop them..one can't do it daily. So, I made enough for few meals I keep changing the flour for my meals. Jowar and Bajra are good for diabetics and so is raagi. I include them frequently. We use mustard oil in a big way, for almost all curries.

We've never seen mustard oil. My mother in law used to preserve mustard greens, but I found the taste of that to be a bit too wild. I'll keep a lookout for the oil, Thanks
