In countryside in Bengal there are carrot plantations. The carrots are used in food both as vegetables and also salads. Winter is the best time for growth of the vegetable. In north India there is a sweet made out of carrot called gaajar ka halwa.

I have planted two pots of carrots. They are doing good so far. I am still to make the first halwa of this season. I might make it on New Year day

@sathviksouvik Yes. We get carrots ( the orange ooty carrots) throughout the year. But they don't taste good for halwa. The red long Delhi carrots are best for halwa and we get them during December and January here.

I love eating them raw as well as cooked--just not mushy. Carrots can adapt themselves to many dishes as well as being a good source of vitamins.

It is an appetizer to my greed !
Well, otherwise too, Carrot is so multi faceted in winters.
We can have in Mixed Vegetable or Potato-Pea-Carrot Dey dishes.
In Pulao.
In Soups with Beetroot.
Or in Salad !
Yet not all market available carrots are good.
One has to pick and choose.
