A Little Heat

Why do all these cooking shows, especially the competitions seem to require heat in the recipes? Not all dishes require heat. Yet these judges will cut you if your food has no heat, meaning hot spices. It is very rare that someone can cook something that is not even meant to have heat to be thought a winning dish if it has no heat of some kind. They are not even talking about ethnic recipes from countries that traditionally cook hot, spicy foods. Is this a trend that will end? Of is heat something that they are always going to require? They even often want desserts to have heat.

A friend of mine from France is of the opinion that chefs who employ the use of hot spices, have got some quality issues with their ingredients they want to hide. I think the modern palette is quite one dimensional, going either the way of too much salt or heat in everything. I don't know why there is this fascination with hot food.
