Today I had methi spinach or fenugreek spinach with brinjal curry.

India is famous for spinach. Different types of spinach are sak are cooked in different styles. My wife cooks methi spinach and methi sak very well. It is eaten with a curry made up of brinjal and potatoes. Methi or fenugreek is good for making parathas also. We love those parathas.

Very nice - I'm not a huge spinach fan, but that brinjal and potato curry is good.
