In Calcutta there are double layered hen's eggs are available. In bengali the yellow part of the hen's eggs we call them kusum. These eggs reared in Arambagh nursery have 2 yellow parts are kusums. They are eaten in boiled form or poach or curry.

@JudyEv thanks Judy I myself is also not very confident. I think the double layered yolks are created by injecting some chemicals in the hens.

I wonder how they know the eggs have double yolks. You get one here occasionally but they sell them that way.
