Smoked fish and eggplant frittata for breakfast

It's Friday and I thought I'd have fish and vegetables to start the day. We've got some leftover smoked fish (tinapa) and I paired that with eggplant frittata (tortang talong) and Chinese fried rice. It's a really heavy breakfast so I'll probably just have something light for lunch or none at all. Later today my girls and I will be watching their school's musical play called "Annie Jr." We bought tickets for the gala show and we're excited to sing along with the cast. My eldest played Annie when she was in preschool. She still remembers much of the songs. Afterwards we'll be heading to our provincial home and spend the weekend there. I'm doing a bit of laundry right now and will do some cleaning before we head out this afternoon. It's tedious to be keeping two homes but this won't be for long. I'm not complaining. I hope this weekend won't be so hot. It's been a challenge to clean and declutter when I'm sweating profusely. What do you usually do on weekends?

It is more a full meal than a breakfast, that was a lot of food. It is not yet hot here, I would say that it's cooler than average to be April.

That's your typical Filipino/Asian breakfast I really ought to go back to the usual light breakfast. I didn't even eat breakfast as a teenager. I guess that's the reason why I was so thin back then.

@grenery8 Unfortunately, it's getting hotter. We are always in the 40's. I'm just thankful that we have air-conditioning at home and that I don't need to go out for work or anything.

Woww, I'm very curious about smoked fish :) What does it look like? This weekend my family plans to go to the supermarket to buy food and the girls will play some games there. After that, we had a dinner date with a friend's family. On Sundays, we go to church so the children learn catechism.

Smoked fish is typically brown or dark brown in color because it's been smoked using black tea, charcoal and brown sugar. :) Glad to know you spend weekends with the family. I miss going to the supermarket on weekends. We haven't had time to do that lately as a family. How young are your kids? My eldest (she's 16) taught catechism during the Holy Week. She was in a Catholic school for 12 years before she transferred to a non-sectarian international school. I'm glad she still has her Catholic roots intact.

@almostoveryou My daughters are 10 years old and 7 years old. They go to regular schools, only studying catechism on Sundays at church.

I normally go to school on the weekends. I'll go to the salon Saturday morning then I go to school in the afternoon.
