So this will be a tiny post to rest my leggs and let them simmer. I first fried them but now they are getting softer and cooked in a slow heat. I added a bit of butter and poured in the skillet the rest of the egg.
I love eggplants in any way. This is a veggie I met when I was about 30 years old. My SIL, just coming from Europe, invited me for lunch and had moussaka. I´m afraid I ate it all (or almost). From then on, I preferred to make a moussaka instead of the normal lasagna with pasta.
Do you like eggplant?

I ate my first eggplant as a moussaka when I was in my 30s. Now they are my favorite veggies. I also make an appetizer with them that is delicious.

Not really like but I do eat eggplants. We add them on some dishes or make an egg plant omelette.
