Crockpot Dinner

Made Roast beef, potatoes, carrots, and onion in the crockpot yesterday. So glad I did as Tom had a long day, and didn't get home till after 6pm. He put in 12 hours delivering and picking up laundry at resorts in Panama City Beach, and Destin. He thanked me last night for having him a good hearty meal. Kind of unusual..I have made roast beef many times before...I just think it was what he needed this time. And it was something I could make without being on my leg a long time cooking. Tonight is leftover night, as I KNOW he will be late tonight...no matter what time he gets off from work, it is his Friday, so he will stop at the AmVets before coming home. LOL

I always like to make what I guess is called something like Mississippi mud or something like that. Nothing fancy. You just throw in the slab of meat and season it a bit, then toss in your veggies and a packet of ranch dressing mix and brown gravy mix. It's REALLY good.

That is how I fixed it...but put a stick of butter on top. My friend told me to put Banana Peppers in it...I tried it ONCE..but the banana peppers were hot. I bought a bag of them..later found out they were a different kind. LOL Was a little SPICY.

@Ghostlady Over time I have skipped using the butter and skipped using the peppercinis it typically calls for. I also use the gravy packet instead of the au jus packet it calls for. But boy it is good anyway.

@porwest If you do not use butter, do you put any water in it? I thought the butter was there so it wouldn't dry out. I used to make a roast with about 1/2 cup water with Dale Sauce (reduced sodium) and salt and pepper. Then I found this recipe and used it ever since. Might try it without the butter..It the roast has quite a bit of fat in it, the butter makes it pretty greasy.
