I Have a Question About Roses

My daughter brings flowers to me from time to time. The other night she brought me a pretty rose-colored rose. It was lovely. The scent was very peppery. It made me wonder again if there is some reason why some roses have that pepperiness to their rose scent while others don't. Are there any botanists or someone with Science knowledge out there who could possibly answer this question for me? The picture is from Shutterstock.com

Each flower has its own scent I would assume. Have a good day.
