Bhetki fish is the sorted after river fishes in Bengal. It is used in hotels and restaurants to make fish fries and fish cutlets. There is biscuit powder and cornflower is used to make the outer part crispy. The fish is also cooked with brinjal parval and potato in curry and eaten with rice. Also bori is given.
