So tonight for our dinner
I cooked a Chicken Curry
A Naan Bread and some pretty basic rice.
I used fresh Chicken Drum fillets which I marinated in my own special marinade for 2 hours in the fridge
Didn't brown them first - threw them in when the onions and some chopped toms and spices were cooked down in some of the marinade liquid and some lard. Chicken stays nice and moist done this way.
Sadly the local Indian Restaurant uses another method and his chicken is dry.
I upped the amount of chilli but came down in hotness.
I tempered with tomato and coconut.
And I used slightly more onion and spices at the start than I usually do.
My own Garam Masala was used.
And to be fair I think it's a masterclass in Curry Cookery.
The deep aftertaste is a thing to savour,
Wow.
And the Naans, Garlic and Coriander,
I bought plain store naan,s but added the garlic and coriander - yum
Rice is rice
Oh and a nice bottle of wine

@Ineeddentures No sweet corn isn't in season here right now, so this is frozen corn niblets.
I froze it last summer from sweet corn that I cut off of the cob and it tastes delicious.
I usually choose either red or russet potatoes for baking, but tonight I am using Yukon Gold yellow potatoes, I hope that they are good.

I would love a steak again but that would be 3 .nights in a row.
Haven't had a baked potato for a long time.
Is your corn on a cob?

@Ineeddentures Vince is good at 'creative' but I'm hopeless. I never know what goes with what. Coconut is often found in curries here.

Yes it is in a lot of milder curries.
Korma, Passanda etc

Actually better than enjoy.
Didn't use a recipe, winged it, and got creative
The coconut with chilli was a master stroke, hotter curries don't really have coconut in them but this worked a treat.
Yvonne said about an hour ago at 1am., she could still taste it - and that's what I wanted.
I would have been happy to pay for .y.food in a restaurant tonight

I was talking about the plates on a post the other day .
I'm a bit fed up with them to be perfectly honest.
What is it you like about them?
I have never liked them but because Yvonne got them I have kept quiet about it.

Well not sure just how well it would travel.
I wish I had written this one down.
I really do.
This one was about gut feeling and spices.
Glad I used less hot chilli

I love a tikka masala ....I am not very good with anything tooooo hot !
We have had curry and pilau rice and a plain naan bread from a local Indian restaurant/takeaway the last four weeks running. We get a free starter of poppadoms and a dip which is delicious, although I have no idea what is in it ... it is bright yellow ....I am a bit concedrned if we have it many more weeks we will start to glow !
oh, well done fior making your own from scratch ...it looks delicious x
