What's going on the dinner table tonight? Share with us! I'm finally getting around to making Anne Burrell's Ravioli al Uovo (RIP chef). They are ravioli with a filling of seasoned ricotta and an egg yolk. You quickly cook them in boiling water, top them with a sage-butter sauce, and you are rewarded with a luscious runny yolk when you cut into them. Yum! I made the pasta from scratch. It is currently resting on the counter. It will help me to use up some more of these eggs. I've been tearing through them with all of the ice cream I've been making but she is going to bring me some more this week and I still have a combination of 24 chicken and duck eggs sitting on the counter. These will use up at least 8 egg yolks. The egg whites will go into the freezer. I see angel food cake in my future! That's what is happening here. What are YOU having? I want to know!
