Ghee

Ghee is produced by heating milk cream that is collected over a time. The cream is kept in the fridge and once a sufficient amount is collected it is heated until ghee is formed. Some make butter and then heat butter to form ghe but making butter is a laborious process. We use ghee in many of our dishes including meat and goodies and even while making some vegetable dishes. Ghee has a nice flavour and food tastes good when ghee is added. These days I do not make ghee but buy it. Image credit:https://commons.wikimedia.org/wiki/File:Desi_ghee.JPG

I’ve seen the traveling chefs/foodies talk about ghee while visiting India. It seems to me that they use it as an offering in Hindu temples, too. It sounds delicious and simple!

I have no knowledge about ghee being offered in temples but I believe you. Ghee has a nice flavour and when it is heated to caramelize sliced onions which is used to prepare dishes the whole house smells good

Yes, it is offered in temple in certain rituals. Also the food offerings are made in pur ghee called prasadam. We even use ghee to light up diyas( earthern lamps) in front of God on special occasions. A little amount is used in bathing Gods too on special days.

To make butter you have to prepare curds from cream and then churn it How do you make your butter? When you churn the curds and make butter then you get butter milk as well.

@allknowing Yes, we churn it with a big spoon in one direction till we feel that it's getting light and fluffy. Then we add chilled ice water slowly with soke ice cubes in it. The butter floats. You can collect it making balls and give them a few wash dipping in clean water. Else the ghee gers that dirt collected. These balls are then boiled to get ghee. The leftover is buttermilk. I boil it to get paneer. Even the brownish thing left after ghee preparation makes nice sweets.

As long as the flavor makes foods taste good than all is good. Ghee sounds like it has good flavor to put in lots of foods.

I buy butter and I melt butter to make ghee. While butter "burns" if heated too much, ghee is perfect.

@LadyDuck It can be stored for days. I wonder why they do not sell ghee where you live.

I still make my own ghee/ clarified butter. I do churn the butter out of the preserved cream. I use the blender and ice cold water to churn the cream.

It’s understandable to switch to store-bought now; making it from scratch, especially starting from cream, takes time and effort
