Season for nutmegs

It is only when it starts raining that nutmegs mature, crack open and fall down . We have this ritual of picking them, separating the mace from the nuts and drying them All this time we used to keep them in the kitchen on the gas and they would dry there for a few days. We however noticed this method did not work for the mace as there would be mildew on them and the mace had to be thrown out Mace is expnesive and does fetch a good price if in good condition If there was no rain no mace would have had to be discarded. This season we have decided to keep them out in the sun as and when we see the sun as that again needs constant watching.

The mildew could destroy the flesh. Need to use either the lady birds to get rid of them or physically remove them.

@allknowing That is an insect that eat Mildew. It is a good insect.

I have bought full nutmegs with the mace. They are perfectly dry, I brought from Greece.

When you say with the mace, was the mace not separated?

@allknowing Yes, the mace was separated, but in the same bag as the nuts.
