Ginger preserve

Tender ginger is used to make ginger preserve The ginger is skinned and propertly forked and soaked in water for three days to get rid of its pungency. All the three days fresh water is added. It is then cooked in sugar syrup to a consistency where the syrup turns sticky Ginger preserve can be kept for several months. It has a nice ginger smell and delicious to eat You cannot eat lots of it though at a time. Image credit:

I prepare pickled ginger to serve with sushi. It also needs to be boiled in water to remove its pungency.

We soak it in water and then cook in sugar. Very tasty

@allknowing I prepared sweet ginger, that was later coated with sugar. It kept well in a glass container.
