Brinjal curry

Brinjals also known as egg plant and aubergine, can be cooked in several ways. I made brinjal curry today Brinjals are chopped and boiled in water adding sliced onions, turmeric and chili powder. Once cooked I added paneer, turmeric water and a touch of jaggery Paneer is nutritious and since I do not eat meat and fish it helps to make up what I have lost. Temper the curry with carmelized garlic and mustard in oil. Add salt to taste. I ate it with apams that I ordered from a store here. Image credit:
