Chipped Beef Tonight is Good Eats, Man

Beef. It's what's for dinner. Of course, if you have been following me, I made a Mississippi pot roast the other night for dinner, and man, was that some good eats. So, what do you do with the leftovers besides just eat it? You make chipped beef, or as some people like to call it, Sh*t on a Shingle. You take the beef, and you chop it up. Chop up some onions, some celery, throw in the carrots and potatoes from the roast if you had some left with it, add some of the gravy if you made that for it, some more beef broth, a little Worcestershire and soy sauce, even a few other seasonings. If it's not thick enough, make a roux. Let that cook and simmer a bit, then toast up some bread and serve the mixture on top of that. Yep, you guessed it. GOOD EATS. So, that's what's going on our dinner table tonight. What's going on yours?

@porwest Might be the only time the word posh has been used to describe sh!t on a shingle. Although I have nothing against it. my grandma used to make it. And cream tuna on toast

It uses up the pot roast and makes it into a different meal, so I think that works on both levels. Plus, it's really good to boot, so that helps too.

we're having some steamed potatoes & onions with gravy which is another thing I have to watch & not have a lot.

@2ndchances24 That's definitely a starchy meal. Luckily, I don't have any issue with it since I love my potatoes, pasta and rice.

That does indeed look quite good Jim I would have no prblemo eating it and I would enjoy it We had a basic dinner tonight as we had eaten out earlier
