Potatoes are indeed versatile. I have used them in different dishes - babata bhaji, deep fried potato slices dipped in gram flour batter, used it as a binder for making patties, added them in egg curry, and today I will use them for making spring rolls
Spring rolls will have a filling of potato, paneer and capsium cooked adding gnger garlic paste, green chilies, shredded onion. All that will be added to caramelized onion.
I have soaked rice and it will be ground to a paste/batter This will be used to fry onion skin thin pancakes filled with that filling and then deep fried
Just waiting to start the process

@allknowing I have never made potatoes au gratin myself. My mom, sister, and grandmother did, and I’ve had it at restaurants, but I never made it.

@allknowing I live alone and work from home. Sometimes I am with the laptop for the entire day. So look for options that I can make quickly.

I love potatoes. We have them in soup. We made curry potatoes, mashed potatoes. But I seldom eat potato chips these days.
