Although they were tasty the spring rolls that I talked about were a flop. It was a long time ago that I had made them and gave them a try again yesterday The mistake was that I used rice batter instead of all purpose flour to make those thin pancakes as we call them They opened while they were being deep fried. Very disappointed.

The key to it is not to make it too tight. For us, we used the ready made skins and they have no such problem when we deep fried them.

I'm sorry they didn't turn out so well for you. I've never used rice flour but my BIL uses it in his shortbread which is always delicious.

Rice is soaked overnight and the batter prepared. The pan rools turned OK as they were not be deep fried.

Ah, that’s frustrating! At least you know what went wrong this time .. next round with all-purpose flour will probably turn out much better.

All purpose flour is loaded with gluten and that is why I avoid it but once in a way it should be fine
