I cheated a little bit tonight and let the store do the hard part—I grabbed a rotisserie chicken instead of cooking the bird myself. But hey, everything else was homemade, so we’re calling it rustic authenticity.
My chicken and dumplings recipe is pretty simple: chicken broth, cream of chicken, shredded chicken, and dumplings. That’s it. Notice anything missing? Yep—no veggies. Not a carrot in sight. And honestly? I sleep just fine at night knowing that.
So that’s dinner at my house. What questionable shortcuts—or gourmet masterpieces—landed on your table tonight?

Chicken and dumplings is not something I have ever made but that does look good and seems rather simple. Maybe one of these days. I have never ordered it either.
It was our first night in Memphis and we went to a place called Jim'n Nick's Bar-B-Q, and it was okay, but nothing to write home about. I posted about it. My mom picked up that bill, about $145.
