What is your favorite local dish?

For me, it would have to be Abacha.
I first tasted it when my late grandmother prepared it for dinner. It was really delicious and tasty.
This particular dish is made shredded cassava flakes, palm oil, and fermented oil bean (Ugba). It is commonly seasoned with crayfish, garden eggs and fish. Really Delicious.

I really like Springfield-style Cashew Chicken.
It is a mix of Chinese food with American overtones. It is a local dish, anyway. It was invented about 70 miles/112 km from my home. It is made with white chicken battered and deep fried with a sauce made with cashews and is served on a bed of white rice. (Pretty eats my rice.

@augusta123 We don't have a deep fryer. I'm scared of getting burned with hot oil so won't buy one. When I was little, mom accidentally spilled hot oil on me so I have a phobia about that now. I still have scars on my right arm and down my side from the hot oil.
Pretty has made it for me before but she doesn't like to cook.
