I hope you are having a good morning. Sun is shining brightly here and it is supposed to be a nice day. I was just thinking about my dinner last night. I wanted to make an egg scramble that I have had since childhood, but it needs bacon or ham to flavor it. I had neither, but I was thinking what meat could I use when I happened on some pepperoni which was a decent substitute..but then I was thinking I also have black olives, red onions mozzarella etc. I could have made an Italian omelet. That sounds pretty good! What kind of egg dishes do you like?

I made an Italian omelet (frittata) yesterday, with zucchini and mint, it was good. I like eggs almost any way.

I think Italian omelette sounds perfect to me. I tried the crab omelette and did not like it.
