dinner and cleaning

Today I did a bit of organizing my food corner, we have shelves and a cabinet in our dining room where we keep a lot of our packaged and canned goods. We keep our bigger boxes of food in that corner too. I finally went through and pitched all of the empty boxes and got rid of any expired food, which thankfully, there wasn't too much. I would have kept going with cleaning, but we don't have AC in our dining room, and it gets super humid in there, and I got too warm. I went and sat down for a bit to cool off before I made dinner.
Tonight was one of my family's favorites. I made beef enchiladas and Spanish rice (I literally just bought the microwavable bagged rice; it's the easy way out, I know, but I save it for days when I've been busy and don't feel like making anything big). I originally thought about BBQ pork tacos, pasta with pork chops (again, pork is a cheaper meat, so I use it a lot). I noticed that today was the last day for meat to stay in the fridge, so I had to bag it and put it in the freezer. I did this while I had the garlic and onion in my pan cooking. I was able to separate out the ground beef for the meal and then put the remaining in the freezer.
I will now have to thaw out any meat I will need, minus the ground sausage and bacon, which are still good for a couple of days before I make anything with them, so I'll have to preplan what I'm making. I also need to use some of my bread before it gets moldy. It's looking like either McGriddle casserole (I've never made this before, but saw a video for it and thought it sounded good) or French bread pizzas tomorrow. I guess it depends on the time I have. French bread pizzas are super easy, so if I continue cleaning, I may be making those tomorrow.
My husband got excited when I told him he has enchiladas for tomorrow's dinner at work. He loves when I cook. I don't mind cooking; it's the cleanup I don't like, but I clean as I go, so I don't have much to do after dinner. My son usually does the after-dinner dishes, but it's typically just plates and silverware. I have been doing a bit more work around the house. I messed up my arm a few weeks ago. I think I pinched a nerve, so I've been trying not to make it worse. It's finally getting where it feels a lot better, so I've been doing more around the house now that I can without being in a lot of pain. There is still some dull ache left, but it still feels so much better than it did. I can literally feel it get better day by day. I'm just grateful it's healing itself. I was worried I'd have to go get it checked out, and we have enough hospital bills right now, even with insurance, everything costs a lot. I don't mind paying for insurance; I just wish that once you pay for it, it covers everything.

Well done you for being so organised & then cooking the meals especially as you are recovering from a damaged arm & your dining room feeling like you are in a sauna. I think you have made a good start on it. We have always cooked from scratch and although it takes a bit longer it is worth it. I have made French bread pizza which my daughter used to love & it was really easy to make.

Thanks, I am sure anything from scratch tastes better, but I am also often on limited time. I have done some stuff from scratch before, but I've found I don't usually have the time for it. During the COVID lockdown, I tried my hand at a few things from scratch because I had a ton of time. I also don't like leaving things like bread out to rise because I have cats, one who is weirdly obsessed with all things yeast. We had to put a baby lock on our brown cabinet we have where we keep the bread because he figured out how to open it and steal bread.

@sissy15 Pets are such a joy to have. My wife told me off one day scolding me for eating the chocolates on the Christmas tree & leaving the wrapping on the floor. I swore it wasn't me. She went to the kitchen to prepare dinner I said quick come here she came to catch the culprit our dog on his hind legs nibbling the chocolate wrapping.
We had to have a box set aside for the kids when they visited rather than put them on the tree. She didn't believe me when l told her it wasn't me! We used to work opposite shifts so we both cooked after getting our daughter from school so she could eat & go to bed then when we got in from work we then had our meal together.

@garymarsh6 They are; they keep things interesting. I will say both my husband and I believe each other when we say it was the cats. It's funny how they can be both so stupid and yet so smart at times. My husband works two jobs, so whatever I make for dinner usually goes to work with him for his dinner the next day. We mostly see each other on weekends.

I remember when I broke my ankle I got a $400 bill for the boot I had to wear. Insurance wouldn’t cover it because it “wasn’t a medical necessity”. Apparently, the insurance thought I should sit in my butt until it healed. Perhaps they expected me to crawl to the bathroom.
Enchiladas sound absolutely delicious. I’m jealous!

@JudyEv It's just a pain having to remember to thaw the meat. I'm terrible about remembering to pull it. I always heard it's best to thaw in the fridge because it's safer and less likely to give you food poisoning. They also suggest putting it in a bowl of cold water or under cold water to thaw it, but that process also takes forever.
