last night's dinner

Last night I made something a little different for dinner. I was in kind of an off mood with everything going on around here, and just didn't have it in me to make anything big, so I decided to make something easy. I made sloppy joe bombs, which is just a fun way of saying sloppy joes in a biscuit and baked. They turned out delicious, though. I don't use canned sloppy Joe mix and always make my own, so that did take a bit more time. I used the off-brand refrigerated biscuits and put the sloppy joe mix in them and folded them over. That turned out to be a pain, but they still turned out. I put together a small salad with them, and that was dinner. My son loved them, and my husband will get his tonight for dinner at work. I have some sloppy joes leftover that I need to figure out what to do with. I might put them in some garlic bread, cover them with cheese, and throw them in the oven if I have enough mix left. What do you make when you don't feel like doing anything complicated and want something quick and easy?

I am glad it turned out good. I just make Noodles..very easy

Me too, I usually try to do something a little bit more since I'm also making food for my husband and son, if it were just me, I'd probably settle for some noodles too. I've found Ramen noodles in particular don't fill my husband or son, they're always still hungry right after.

That sounds very good. I usually make spaghetti when I don’t want to mess too much with a big cooking effort.

Spaghetti is a big effort here lol. I don't usually use jarred sauce and make homemade meat sauce, so there's more work to it, which my son found out when he made it last week.

I don't fuss for myself at all but at times I do things like putting fries on a baking sheet, adding smoked sausage, topping with hot dog chili sauce and shredded cheddar,

If it were just me, I'd probably make much simpler dinners, not that I've ever done anything over-complicated. That doesn't sound bad. There are times when simple and fed really is best.

It would usually be scrambled eggs for me and bacon if we had it.

That would be easy, but my son and I aren't big egg eaters. Ultimately, it's whatever works with what you have.
