Bottle gourd cake/Indian pitha

This cuisine is very popular in Odisha and West Bengal. Grated bottle gourd and coconut is mixed with rice powder, semolina sugar and some dry fruits like cashew, raisins, etc. They can be made into a batter with water or milk and baked. The baking tray or utensil has to be greased with clarified butter/ghee. I sprinkled some chopped walnuts on the top to make the cake crispy.
