Eggplant Parm without breading or frying

I saw a delicious recipe by Joy Bauer which is this one. I have seen things like this before, but the pic looked really good, low carb and cheesy. I think I am going to make it this weekend. Basically you cut the eggplant in half..and prepare according to her method and load up with cheese. I think there are a few variations on this theme..but these are only 270 calories per half. not promoting her or her links, just thought you would be interested in the recipe.
These eggplant parmesan boats are baked, healthy, and protein-rich—a lighter, low-carb twist on the classic that’s still totally delicious.

Yes, you wouldn't even need an extra vegetable with it, if you didn't want to, but I would probably add a small salad.

The Italian northern recipe for eggplant Parmigiana does not ask for breaded eggplants. Some fry them first, but I grill a few minutes before layering with the sauce and cheese.
