Health Journey 2026 - First Month Thoughts

Hello everyone, how are you all doing?
I thought I would share my food for the day, but also my thoughts on how the first month has gone.
The first month has not been perfect; it's definitely been a struggle. But it is a trial and error with foods I enjoy and can eat to stick to this long term.
I have had a few carb days, which eventually I hope to fully cut out, but we will see. I just know how much it affects my weight and blood sugar.
Weight - I have lost 12 pounds in the first month, I had got down to 15 lost but gained some back after my carb day. Been working on losing that extra 3 pounds.
Blood sugars - they finally have started to stablize. Been running low 100s, sometimes 80s and 90s. I sometimes go up to the 120s, but that is the highest the last couple days.
Other than weight and blood sugar there is more.
I am a lot less inflammed, which means I am in a lot less pain. I could barely walk or stand up for very long before I started. Now, I can walk and stand longer and my back is in not very much pain.
My legs still need to lose some more inflammation, because they still will get tired and hurt. Also my knees. But I weighed over 200 for quite a few years. So it will take some time to heal that.
Now what did I eat today?
I started the day by putting a chuck roast in the oven in my dutch roasting pain.
I did have a cheese stick while I waited.
When that was done, I had 5 ounces of the meat. So good. Sadly I kind of overcooked the outer edges so it got too hard. I'll try to cook it better next time.
Later at my mom's I had 3 oz of salmon, and some little smokies (sausages) with some sugar free barbecue sauce.
I came home and wanted more of the roast, but like I said I ruined a lot of it :(
So had part of a breakfast sausage and some butter.
I should have ate more, but I didn't want to cook any more and I must have not been very hungry if the breakfast sausage wasn't appetizing.
Macros -- 973 calories, 4 carbs, 79 fat, 63 protein
More calories than yesterday at least, but still too low. I'd like to at least be in the 80s for protein too.
So what do you think, especially of the benefits I've seen? I know many of you don't agree with this lifestyle, but I will continue to share my journey and we'll see how I am as time goes on.

congrats on the 12 lbs and the blood sugar leveling out, that's huge honestly. sorry about the roast getting overcooked, that happens to me all the time with the dutch oven

Thank you, still hoping to get it down a bit before I go to my doctor appointment on Wednesday. Yes the blood sugar thing is the most important.
Oh really? Any tips to have that not happen? lol. I think I just need to cook it less lol
