Health Journey 2026 - Day 32

Hello again everyone, how are you all doing? It's early Friday here (just after midnight) and I thought I would share how I did today. Yesterday I did have some carbs remember. Today I worked on getting my blood sugars back to normal with carnivore. I got it down to the 120s at one point, but not any lower. Tomorrow I will work on it some more, try to get in more fat than I did today. So what did I have to eat? I did eat twice, but both meals were exactly the same. I made a carnivore version of a chicken cordon bleu. So, inside the chicken I had Swiss cheese and slices of deli ham. I "breaded" the chicken in a pork panko (which is just crushed up pork rinds). I also made a sauce to pour over the chicken (with what was left in the pan after the chicken was done, added some butter, a bit of heavy cream, and some mozzarella cheese. No, not perfect carnivore, but still really low carb and high in protein. I also had a spylt chocolate milk (caffeinated) -- it had 3 carbs. So overall my macros were not too bad. Approx. 1,104 calories, 11 carbs, 65 fat, and 127 protein I didn't really measure so that is why it just an approximation. They did turn out really good at least. Would you try this dish? And, what do you think of the day?

that chicken cordon bleu sounds so good, pork panko is such a smart idea. Getting your sugars down to the 120s is great progress, hope tomorrow goes even better. I'd definitely try that dish, sauce sounds like the best part!...

It was really good! I didn't know how it would turn out. Yes, it works perfectly as a breading. Going to use it more in the future. Yes, it was a good start. I probably just need to cut out the carb days entirely but it is nice to get 1 day every once in a while to enjoy other foods. The sauce was pretty good, except it didn't go very far lol

I wouldn’t try it, but that’s just because I don’t like regular chicken cordon bleu. I wish I did!

Well my husband doesn't like regular chicken cordon Bleu but he loved this. It didn't really remind me of a regular one, but it was tasty lol

I have low iron. But stupid vitamins like to aggravate my stomach. So I have taken to eating a lot of tuna and some salmon. I tried dark chocolate but that just gave me heartburn. I did the intermittent fasting and lost 30 pounds, but have gained about 10 back. I've been doing gentle exercises and only eat brunch (around 1:30pm) and a light supper (usually tuna). That belly just won't go away. But I'm trying (and not gaining anymore weight).

It was really good. I think I should have only had it once and had a steak for the 2nd meal but oh well.
