Went to AmVet early, ran into some friends we hadn't seen in a while. Was a nice day. My friend loved her angel I got her, and her husband liked the shirt. We had cake. It was nice..not real sweet. The icing was light and fluffy almost like canoli filling. We came home and ate left overs from last night. Didn't win on the pull tabs today.
As much as I hate having to go to Walmart, I gotta go tomorrow. I am out of lemon cake slices. Thinking about making Mexican Lasagna for supper, but maybe not.

Sounds like you had a really nice day, especially getting to catch up with friends you hadn't seen for a while. I'm glad your friend loved the angel and her husband liked his shirt too. The cake sounds delicious, especially with light, fluffy icing. I prefer that to really sweet, heavy icing. ?? Too bad about the pull tabs, but you can't win every time! I smiled at the Walmart trip being necessary because you've run out of lemon cake slices. That's definitely an important reason to go! Mexican lasagna sounds good too, although after a busy day I'd probably be tempted to choose something easier.

Mexican Lasagna is pretty easy. Cook up hamburger and taco seasoning. I have a pyrex bowl that the tortillas fit perfectly. Take a tortilla in the bottom of the dish, put some shredded cheese, then taco meat, more cheese, another tortilla, meat sauce, cheese, tortilla, meat sauce, cheese, then the last tortilla and use up the rest of the meat sauce, then smother it with cheese. Put it in the oven for 35min. on 350°.
