Today, I treated myself to my all-time favorite Korean dish, Samgyupsal. There’s just something about the experience of preparing and eating Samgyupsal that makes it special every single time.
I started by slicing thick, juicy pieces of pork belly and getting the grill nice and hot. As the meat sizzled, I prepared a variety of side dishes (banchan): crisp lettuce leaves, kimchi, pickled radish, and a little bowl of spicy dipping sauce. I also made sure to have some garlic and sliced green chilies on the side for that extra kick.
Once everything was ready, I grilled the pork until it was golden and crispy, then wrapped each piece in perilla leaves (others usually use lettuce) with a bit of rice, kimchi, and a dab of sauce. The combination of flavors and textures is unbeatable, savory, fresh, spicy, and satisfying.
Samgyupsal isn’t just a meal for me, it’s an experience. Sharing it (even if just with myself) always feels like a celebration. No matter how many Korean dishes I try, Samgyupsal will always be my favorite!

I've never tried that but it does sound good. Maybe we can make that when you come to visit me.
