Hello everyone. I hope your day is off to a good start. It is 55 degrees F, raining, and windy here at the Jersey Shore. The nor'easter has hit! They are talking about massive flooding. I live on the 3rd floor so I'm not worried about it. I went to bed early so here I am up at 4am. Awesome. The weather is rocking out there. I put some stuff into my Instant Pot on slow cook mode. I will use those ingredients for chicken enchiladas. I have a few other cooking projects on deck. We will see how much I get done. I'm not going to stress about it. What's everyone else up to today?
