Hello everyone, how are you all doing?
It's after 2 AM here, so I am about to go to bed. I wanted to share this before I got off for the night though. I have been keeping up with sharing my health journey, so want to keep doing that.
My weight did drop even more, I am surprised it is doing that. I know at some point it will slow down and that's when things will not be as fun.
What did I eat today?
Meal 1 -- 2 eggs and 5 strips of bacon
Meal 2 - 6 oz of chicken breast cooked in olive oil.
- This meal didn't turned out as I hoped. I was following a recipe from this carnivore person I follow. I marinated the chicken for a few hours in buttermilk, and then coated it in pork panko (just crushed up pork rinds). Sadly during the cooking process all the "breading" came off. It still tasted good but didn't come out how I wanted.
I made a dipping sauce with avocado mayo (no bad ingredients) and sugar free BBQ sauce (a little less clean but not too bad).
Later on in the day I had a little butter to finish out the fat I needed.
Macros -- 1,253 calories, 2 carbs, 98 fat, 87 protein
We'll see what the scale says tomorrow and how this next week ahead goes.
Oh, and any ideas on how to get the "breading" to stick to the chicken better? I followed their recipe exactly except they used beef tallow.

Olive oil is good.
If you put the chicken in something wet before the breading it helps a lot. I use egg or and egg and milk mixture.
Also some corn starch usually helps.

@MommyOfEli2013 I get that you want to stick to animal products, but its a good choice. You dont always have to use animal products lol
No, if you had it in buttermilk i wouldn';t of dried it off. Was it in the fridge in the buttermilk?

It's better than some oils, that is true. Just not an animal product lol
Well it was in the buttermilk for hours, so I thought it would work fine. Just wonder if I should have dried them off, then dipped in egg before the "breading".
Not so sure on using corn starch, I mean I'm sure it would work just not sure it's something I would include

Maybe dip in scrambled egg before rolling in the breading

@wolfgirl569 there was no written recipe, but the person on camera just put it directly from the marinade into the breading

2am goodness I would be exhausted.
It’s awesome you lost more weight.
I assume when the recipe went wrong was not also dipping it in egg yolk before breading it but I could be wrong.

The person I watched make them did not dip theirs in egg before. They just went directly from the marinade to the breading. Normally I would do egg though

Roll the chicken in flour
Works for me
Or you could try rolling it in a beaten egg first

Flour isn't carnivore lol
It was already wet from the buttermilk lol, so I didn't think it needed the egg

@Ineeddentures if I was just doing low carb I could probably find some kind of flour lol. But not really on this one

That makes sense, if I do the buttermilk again I will try to remember to dry them off first.

I guess we'll see if someone does. Normally I would dip it in egg then the "breading" but this person just went straight from the buttermilk marinade.
Hopefully you can if you got to be up soon. Not being able to sleep is rough...
