The apple pie cake truffles were a big hit

Today the Baking Club assembled the apple pie cake truffles from Christina Tosi's "All About Cake" baking book. They involve 4 components but none of them are difficult. They just take some time. I made 3 of them in advance here and then had one of the members melt the white chocolate as we were setting up. I have a Google Classroom where I post announcements, updates, etc. I always ask them to just let me know if they are coming so I can be sure that I have enough supplies (and room) for everyone. I don't mind 1 or 2 extra people but today twice as many who said they were coming showed up. Luckily I doubled the recipes so there was enough of everything for everyone to take a handful home. I asked the teacher in charge of General Accounts how much the club has in our account after Friday's bake sale. The grand total is $1193. I don't even know what to do with that much money. Our projects usually cost like $150. $200 tops. We made $209 just last Friday alone. In any case the members had a blast. I am exhausted. I honestly was dreading staying after for this project today after getting minimal sleep. I thought " $600 per year is not worth it for this." But it really was worth it to see how much fun they had. Now I have to start thinking about what to do next month!
