Why Does Chpping an Onion Make you Cry?

The juice in an onion is what makes you cry and it is highly concentrated in the root. If you can chop it without chopping the bottom off it is not so bad. I just do it quickly and get it over with as soon as possible. Also, this is strange but true. If your eyes start to burn from chopping an onion, stick your head in the freezer for a minute. I have no idea why but it makes the burning stop. If your hands smell like onions just rub your hands on the stainless steel faucet on your sink. It removes the odor like magic. I found all this out when I worked for a pizza place and had to chop onions quite a bit.

I think I must have tried just about every so called remedy, without success too. Holding a matchstick in between the teeth, cutting without peeling first, washing the onion etc. I think it depends on the type/variety of onion, as some seem to have more 'juice' than others.
Finally I did find a remedy though. Get my husband to peel and chop the onions and now I no longer cry when they are done. LOL

Not sure what it is in the skin that makes us cry when we cut them up. I usually run it under cold water when I cut them and it isnt so strong. Works for me so maybe it will work for you too.
