I love to use herbs and spices in my cooking - they can enhance, or add new character to the dish, depending on which you choose to add. Of course choosing the right herbs and spices can help you to digest richer foods and help to cure ailments; you can choose the combinations of herbs and preparation of them according to the health-needs of the person/people you're cooking for. Isn't mother-nature great?!

I use herbs and spices rather than cooking with fats like butter. Butter adds flavor to cooking, but if you substitute other things that have more flavor, your tastebuds will thank you and so will your body.

Yes I do use a lot of herbs and spices in the cooking, as I prefer to cook meals from fresh products rather than buying pre-prepared foods which can be added to the meat or whatever. We have a small herb patch which does help, plus when we get an excess I just hang it upside down to dry and then put it away in clean bottles to use when there is nothing fresh.
Parsley, mint, basil, peppercorns, curry, chilli, mustard powder, rosemary, thyme, bay leaves, ginger, garlic to name just a few that I use regularly. When our son is home it is done in 2 batches though, one really hot one for him and my husband and one gently spiced for me. :)

I used to use basil a lot when I grew my own, but now I don't. Herbs are a little pricey for me, but I still use them from time to thyme.

Its depends up on what you are cooking. For instance, If i am cooking rice i use cinnamon stick and thats gives nice aroma to the rice.

We use loads of herbs and spices, we also grow as many of them as we can so that we can use them really fresh. We like spicy food so use pepper and chilli a lot, but also bay, thyme, rosemary and chives from the garden

Yes, I do use herbs, but I guess you could say I'm a ginger freak. I use ginger in just about everything.
I'd better hasten to say NOT ground ginger!!
In Australia, for the lazy ones like me, Continental Brand puts out a jar of minced ginger which has no additives. I must warn that Continental is the ONLY brand I'll recommend, because none of the others have the taste. They're awful! Of course, you could grate your own fresh ginger, but sometimes it's rather dry. I prefer the jars.
Have you ever tried ginger porridge? uuummmMMM! (Too bad it's too hot for porridge most of the year here) What about a teaspoon of ginger in your coffee or even more so, in your hot chocolate?
I add ginger to vegetables and to nearly all my meats. I like to marinate meat, chicken and fish in a mixture of ginger and lemon juice .. or ginger, chili and lemon grass .. or ginger and honey .. or ginger and Italian herbs .. or ginger and mint .. or ..
Try dicing a mixture of veges - potato, sweet potato, swede, parsnip, pumpkin, beetroot, onion, squash, capsicum, carrot and anything else. Coat these in a mixture of oil, lots (and lots and lots) of ginger, lemon grass, chili and Italian herbs and roast them for about 45 minutes (depending on the size of the dice). Make sure you dice the beetroot smaller than the others, because it takes longer to cook) Delicious!
I think you get the idea I'm a ginger freak!
PS Ginger is VERY good for the digestion and for ARTHRITIS.

I love all sorts of herbs in cooking. I'm not like those cookers who just throw any old herb in the pot or the pan. There are certian herbs that compliment each other while cooking. I like using celery salt with parsley flakes and dill with a bit of garlic powder.
