We love pumpkin done up as a vegetable. I peel and cut into large chunks about 2 in x 2 in. The spread them out on a cookie sheet or in a shallow roasting pan. Sprinkle with salt, pepper, a touch of nugmeg and cinnamon. Sprinkle on some brown sugar and into a 350 degree oven for 45-60 minutes depending on your oven. I usually stir 1/2 way through to mix up and turn pieces. Serve hot with butter. YUMMY!

I hope you are asking for recipes for idea's on what you could make with pumpkin. As that is what I enclosed I had enclosed below. Is two recipes that I have made in the past. I hope if this is what you are looking for that you do end up enjoying them. As I know the muffins are very nice to have as a snack I find. And the pie is nice for a dessert for a special occasion or just for after supper. Thanks for allowing me to share with you these two recipes. xx "Pumpkin Muffins." Ingredients are as follows: - 1/2 teaspoon of salt - 1 teaspoon of baking soda - 1 teaspoon of baking powder - 2 teaspoons of cinnamon - 3-1/2 cups of flour - 1 teaspoon of vanilla - 1-1/2 cups of sugar - 4 large eggs - 1 cup of oil - 2 cups of pumpkin - 1 cup of raisins (optional) Directions are as follows: - Preheat your oven to 350 degrees F. Then butter 3 inch muffin pans. - Then in a small bowl, combine the pumpkin, the vanilla, the eggs, as well as the oil & sugar. Then sift the flour, the baking powder, the baking soda, the cinnamon & salt. - Then combine the wet ingredients with the dry ingredients. Then beat until smooth. If you want you can add the raisins (optional though.) - Then pour the batter in the greased muffin pan, filling filling each with 2/3 full. - Then bake for 30 minutes. Until lightly browned. Another recipe that I hade made for thanksgiving, & a few other special occasions is of course the traditional pumpkin pie. "Pumpkin Pie." Ingredients are as follows: - 1 unbaked deep dish pie shell - 1/2 teaspoon of salt - 3/4 cup of sugar - 1/2 teaspoon of ground ginger - 1 teaspoon of ground cinnamon - 1/4 teaspoon of ground cloves - 2 eggs - 1 1/2 cups of evaporated milk - 15 ounces of pure pumpkin Directions are: - Firstly combine the sugar, the cinnamon, the salt, the ginger & cloves in to a small bowl. - Then beat the eggs lightly in a large bowl. - Then stir in the pumpkin & the sugar spice mixture. - Then gradually stir in the evaporated milk. Then pour it in to the pie shell. - Bake the pie in at 425 degrees F. For 15 minutes. Then reduce the temperate to 350 degrees. And bake for 40 to 45 minutes or until the knife that is inserted near the center comes out rather clean. Then cool on wire rack! . .

I'm the 'cook' who burnt the simple pumpkin soup I was making for my married daughter last month. Lol. I put in on simmer and forgot about it. Pumpkins are yummy. The ones I use are imported from China and Japan. They easily available in the supermarkets here. Any amount of cut pumpkin you want to cook for the family. Chopped onions according to your like for onions ( Lazy me use dry onion flakes ) Some canola oil or butter Garlic powder Enough water to cover the pumpkin pieces ( more water if you a watery soup, less if you want a thicker soup ). Put all the ingredients into a pot and bring to a boil and simmer for about half an hour. Mash the pumpkin up. We eat the pumpkin rind, mmmmm. I'm no cook.
