Quick Mix - Homemade Mixes - with recipe

I love making my own homemade mixes. I find that if I have them already prepared that I am not tempted to run to the market and purchase them. They are frugal to make and so much better for you and your family. They have no MSG or preservatives in them. This is one of the most versatile of all the homemade mixes. It can be used for biscuits, doughnuts, coffee cake, muffins, pancakes, and other goodies.
Quick Mix
8 ½ cups all purpose flour
4 Tablespoons baking powder
1 Tablespoon salt
2 teaspoons cream of tartar
1 ½ cups nonfat dry milk
2 ¼ cups vegetable shortening
In large bowl or kitchen aid mixer, sift together all dry ingredients. Blend well. With pastry blender or heavy duty mixer, cut in shortening until mixture resembles cornmeal in texture. Put in an airtight container. Remember to label with date and contents. Use within 12 weeks. Makes about 13 cups of Quick Mix
Now that you have got the Quick Mix made you can use it to make biscuits
Biscuits
3 cups of Quick Mix
¾ cup milk
Preheat oven to 450. Grease a baking sheet. Combine Quick Mix and milk in a medium bowl. Stir until just blended. Do not over stir. Drop dough by tablespoonfuls onto prepared baking sheet . Bake 10-12 minutes until golden brown. Makes about 12 drop biscuits.
You can also roll them out and cut them into biscuits. Dip your biscuit cutter in flour to prevent sticking.
Fruit Cobbler
Spoon prepared biscuit Dough over top of hot sweetened fruit or berries and bake in 8 inch square pan about 20 - 25 minutes until golden brown
Country Dumplings
Drop biscuit dough by tablespoonfuls over top of boiling chicken stew or chicken broth. Boil gently 10 minutes uncovered. Cover and cook over medium high heat 10 more minutes until completely cooked. Makes 12 dumplings

Just had an idea and thought that I would share it with you. I will buy the ingredients and offer them to the families that I might get the call to help with dry goods. They can then make these mixes to help feed their families! Could offer to tell then or include the way to mix it up and then be prepared to cook and tend to the families needs! Thanks for sharing these. Lost my mixes book in the fire so these are filling the lack that I got from that event. And a new friend to boot. Such a good thing!!!

these are wonderful recipes! all of them so quick and easy...just how i like it...thank you for giving such a good variety...from biscuits to fruit cobbler...wow!..they are awesome..thanks so much!

I agree, a little convenience makes it soo much easier to cook and to have home made meals. This is a good way to cut down on how often you go out to eat. I think I have to do this one, because I like the things you can do with baking mix. I will probably use some specialty flour in mine, like oatbran flour.

The key is to keep a mix on hand at all times. I take an after noon and make all my mixes up at once. That way is saves me time and energy

I have been looking for a recipe like this. It looks easy and I love saving a penny. My grandma used to say 'a penny saved, is a penny earned'.

BAKING MIX

DIRECTIONS
In a large bowl, combine the dry ingredients. Cut in shortening until the mixture resembles coarse crumbs. Store in an airtight Tupperware container in a cool dry place or in the freezer for up to 8 months.
