toasted zucchini using popcorn

2 med. zucchini, 2 to 3 cups finely ground popped popcorn, 1 cup vegetable oil, 2 eggs beaten Cut zucchini into 1/8"slices. Place ground popcorn in a large bowl. Heat oil in a large skillet over med. heat. Dip zucchini slices in egg, then in ground popcorn. Cook in hot oil until golden. Sever hot. 4 to 6 servings.

I do not even like to fry foods, but this sounds really yummy. How do you crush your popcorn. Did I miss that in one of your other discussions? I love zucchini.

I have a vita mix. You can use a strong blender. I put a lot of neat stuff on today. Try to see them all. Very different ideas. You do not have to fry it, if you dip it in melted butter, you can bake it.
