Protein-Fortified Cornbread Muffins

I am reading the book: Enter the Zone by Barry Sears, PH.D. and I found the following recipe that replaces a meal and you won't be hungry, good for diabetics too: Protein-Fortified Cornbread Muffins 1 package Jiffy Corn Muffin mix (6 ounces) 7 tablespoons protein powder 2 eggs or 1 cup egg substitute 1 cup low-fat milk 1 tablespoon olive oil Blend the ingredients together, and fill individual foil-lined muffin cups half full. Bake at 300 degrees for 35-40 minutes. Makes approximately 20 muffins. (1 protein block per muffin) Hope you like them. They are great!

Thanks for this one. Where do you get the protein powder? Diabetics should only be careful of this due to the processed flour in the the muffin mix. The sharing of these recipes are a grand step in all of us eating healthier. Must state: Balance in all things!!!

You can purchase the protein powder at a health food place. Buy the one without sugar. The muffins to eat is a maximum of two per day.

I would probably still use my own cornbread recipe, it has much less sugar than Jiffy. I could add the protein powder as well. It is a good idea. Thanks for sharing this with us. Was that full size muffins, or mini muffins.

Oh thank you so much for your lovely recipe I am a diebetic and have to watch what I eat. I shall have a look around for this Jiffy Corn Muffin but I do not think that we have it here in Australia I have never heard of this one.

It doesn't have to be this brand, you can try looking for any other cornbread mix. Hope you find one.
