Hi! It's my turn to share a recipe with you all! :-) My mom and I made this last weekend. It was different but it could get you out of a jam if you want to make bread but don't have cream/milk or eggs. We used Haagan Daas (sp?) butter toffee ice cream.
Ice Cream Bread
1 and 1/2 cups self-rising flour
1 pint quality ice cream (any flavor) - don't use fat free or sugar-reduced ice creams, and ice creams with strong flavors like rum raisin turn out better
Let ice cream get mushy. Add flour just until mixed in. Don't overmix. Pour into a greased and floured loaf pan and bake at 350 degrees for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
This bread is also good toasted with butter, jelly, jam, whatever you like. The dough can also be baked in lined muffin tins.
Enjoy! :-)

Wow, definitely a unique recipe! Thanks for sharing. It might be interesting to make up a "strange" flavor!

Hi! Oh, I'm so glad to hear that! We made ours with toffee ice cream and I didn't think the flavors were really strong enough. I'm really glad to know that coffee ice cream works well. Thanks for letting me know! :-)

Hi! Thanks, but it wasn't my idea. I wish I could take credit for it, though! :-)

Hi! You're welcome. It is very easy to make. The thing that takes the most effort is just waiting for the ice cream to get slushy! :-)

That is such a interesting recipe. I never knew you could use ice cream that way and I didn't know that bread was so easy to make.
I just might try that on one of my experimental weekends.

Hi! Yes, it tasted good. We used a milder flavor ice cream. The recipe says the stronger the flavor the ice cream has, the stronger the flavor the bread will have.
:-)
