How to Sneak-in Healthy Foods

Hello Everybody- I have type 2 diabetes, which is being treated with diet & exercise not medication or insulin at this time. It's been about 2 years since I was dianosised & so far, I am doing fair but not "great"job following a healthy meal plan. I recently found out that I am expecting :) and it's obviously become even more important to eat healthy & control my blood sugars. I've come up with a couple ideas to make eating healthy easier, but I could use a few more. What I am doing so far are things like- cutting up veggies & keeping them in the fridge so they're ready when I want a snack. I have a batch of coleslaw (homemade with less sugar)made up for the same reason.I'm adding finely shredded carrots or parsely to various dishes I make and adding baby spinach or other greens to my salads. I'm also keeping a food journal so I can see where I am coming up short & what I can cut back on. Veggies & dairy seem to be the areas I'm not real consistent with; any one have any other ideas?

Congrats on the pregnancy. I wish you the best with it. The first thing I thought was dried fruit but then I said to myself "no too much sugar". Have you ever made homemade granola? You can control the sugar quite well in that. Cheese sticks and yogurt for dairy? I'm sure I will think of other things. If I do I will come back and add to this.

Congratulations on your pregnancy! You seem to be doing a good job of controlling your diabetes. After reading the other posts, I don't have much to add. The only thing I see missing is fresh fruit. My sister was told to eat lots of fresh fruit. Like apples, oranges, pears and red an/or purple grapes, the darker the grape the better. Her ob-gyn said to stay away from bananas because they tend to increase the glucose levels too fast. Also being pregnant increases the chance of retinopathy so it would be a good time to get your eyes checked. Here are a couple of places where you can get all the info you will need to stay healthy. I would suggest smoothies for your dairy. I make one every day after learning that I need 80-100 grams of protein during pregnancy. Throw some milk or yogurt in the blender with a banana, ice cubes, and chocolate protein powder and there you go! Chocolate banana shake with nearly 30 grams of protein! I have no problem with veggies, I simply keep the ones I like the most in the fridge all the time. I snack on cherry tomatos a lot, and one of my favorite snacks is squash. Cut in half lengthwise and bake upside down in about a half inch of water till tender. I sweeten with a touch of butter and blackstrap molasses for the iron. Also, I am in the habit of making HUGE salads. I get out a big mixing bowl and fill it with fresh spinach or baby greens, then add cherry tomatoes, dried fruit, avocado chunks, green apple, sprouts, carrots, cabbage, nuts, cubes of cheese or goat cheese.. whatever you have to make into a salad. Then I toss it with a dressing my husband makes that consists of half olive oil and half apple cider vinegar or balsamic vinegar, a little mustard, a little honey, salt, pepper, and a few good squirts of flax seed oil. Salads to me are not starters, they are meals. Especially with the cheese and nuts for protein... Nutritional yeast is delicious sprinkled on popcorn. It has tons of vitamins and easy to absorb protein. If blood sugar is your issue, grapefruit is good for you as it has a very low glycemic index. Also bananas. I think the golden rule of eating healthy is: If you don't want it in your body, don't put it in your cart. If it helps, make a list of all the things you NEED to eat to stay healthy and only buy whats on the list. Only buy whole grains and good fats and sugars.
