Its the end of a long week, so get yourself a good DVD and curl up on the couch with this lounge-friendly fried rice. Preparation Time 10 minutes Ingredients (serves 6) 500g (2 1/2 cups) long-grain rice 1 tbs peanut oil 800g peeled green prawns American call shrimp 6 bacon rashes, rind removed, coarsely chopped, about 1.5cm pieces 3 eggs, lightly whisked 8 green shallots, ends trimmed, thinly sliced diagonally 100g (1 1/2 cups) bean sprouts, ends trimmed 80ml (1/3 cup) soy sauce Method Cook the rice following packet directions or until tender. Spread the rice over a baking tray. Place in the fridge overnight to cool completely. Heat the oil in a wok or frying pan over high heat until just smoking. Add the prawns and stir-fry for 3-4 minutes or until the prawns curl and change colour. Transfer to a plate. Add the bacon and stir-fry for 2-3 minutes or until golden and crisp. Transfer to the plate. Add the egg and swirl slightly. Cook for 2-3 minutes or until almost set. Use a wooden spoon to stir and break up the egg. Add prawns, bacon, rice and soy sauce and stir-fry for 2-3 minutes or until the rice is heated through. Add the shallot and bean sprouts and stir-fry for 1 minute or until combined. Spoon into serving boxes and serve immediately. Notes & tips Note: You can prepare this recipe to the end of step 1 up to 1 day ahead. Continue from step 2 up to 30 minutes before serving.

Looks like an interesting recipe. I have never seen green shrimp before. Does it have to be green? I'll see what I can find at Tesco tonight when we go shopping. Thanks for the recipe.

Hi, no the prawns are not green, they are pink when cooked.

Hi kathy, thank you for sharing this recipe. I do this dish quite regularly except that I do not fry the ingredients separately and then set aside before throwing everything back in with the overnight cooked rice. This is because I want to cut down on the oil used. So normally I will spray some oil in the wok, throw in shallots and garlic, then the prawns, bean sprouts and bacon, fry it abit and then lastly the rice. After this, I will use add some oyster sauce and soya sauce to add flavour to it. Sometimes I fry it without the egg, depending on my mood, lol. But I agree with you that this is a yummy dish and worth sharing. Bless you.

some other reason for not frying the ingredients separately is that the taste of the shrimp will gone...so it is better for us just fry it together with the other ingredients.

Thanks Kathy I just adore prawns and this sounds brilliant , and with the Rice it would be really filling too , nice one my friend xx

wow!! Yummy....i actually like to eat any seafood fried rice,..and your recipe if in my country we called it chinese style fried rice because you are using the egg...In my country we can even eat this at a small stall in the night market or anywhere...yes this is a tasty one to try,...

Thanks for the recipe. I'll be shopping first thing in the morning to get the ingredients. I love seafoods and rice dishes and having them together in one dish is superb. Thanks again, hope you'll post more wonderful recipes. Much appreciated by a food lover like me.
