I want to share a fabulous "Rice Pudding with fruit and almonds" recipe!!

If you love homemade rice pudding like I do, you might want to try this updated version of an old favorite. I keep finding new and interesting ways to use cranberries! 2 cans coconut milk, unsweetened, (14 ounce cans) 1 1/4 cup water 3/4 cup sugar 2-3 teaspoons vanilla 1 1/4 cup uncooked rice 1 cup cranberries, or dried cherries. or raisins 1 1/2 cups chopped almonds Heat the milk, water, sugar, and vanilla to a boil. Stir in rice, reduce heat to low and cover. Simmer, covered, until most of the liquid is absorbed. Stir occasionally. Watch carefully to avoid mixture boiling over. When cooked, add fruit, and one cup nuts. Serve with more nuts sprinkled on top.

This sounds wonderful. I love Rice pudding and to thow in fruit, I love fruit. Thanks for the recipe. It sounds great. I do have some dried cherries and cranberries and I will toss those in too.

I've never tried the dried cherries. But I want to. I just have to remember to put them on my shopping list!

Yaiy! Thx for the recipe! I'm always looking for a new pudding recipe, thanks to you, finally found one =) I'll try to make the dishes as soon as possible. But it's very sad to say that in my country, it's hard to find some cranberries, maybe I should switch it to strawberry?

I would suggest trying raisins or dried cherries, if you can't get the cranberries. I'm not sure how strawberries would work out. If you do try it, let us know!!

I love rice pudding and this sounds delicious. But one quick question, does it taste all 'coconutty' since I don't like coconut that much. If it doesn't then I will try it this weekend as I have 2 cans of coconut milk ready in my pantry..lol Can I substitute coconut milk with just good ol' plain milk? I wouldn't mind that.

You can certainly use plain milk if you prefer! If you don't like the taste of coconut, I would recommend regular milk. If you like the flavor of almond, I'd suggest adding a teaspoon of almond extract. I love it that way!

I don't know if I'm talented enough to make that recipe from scratch, but it sure does sounds tasty! If I can't, I can always add some of those ingredients into store bought rice pudding. Kozy Shack is my favorite brand. I wish I could eat it more, but the calories aren't that great. They have a no sugar added rice pudding, but it is tasteless!
