Easy Eclair Cake...actually no baking involved

This is something that my daughter's and I have come up with over the last two years. We took someone else's recipe and began to play with it and now it's our own. Take a large 10X14 inch glass pyrex baking dish. Line the bottom with your choice of cinnamon graham crackers or vanilla wafers. Keep them whole and line the entire bottom of the pan. On top of that you're going to mix a large box of chocolate pudding according to the directions on the package and smooth that over the graham cracker/cookies. Let this set for about 5 minutes to give the pudding time to set completely. Next, you're going to take half of a 32 ounce tub of coolwhip topping that is thawed completely and spread that over the pudding. Another layer of cookie/crackers goes down over this. You can either leave this layer whole...or crush them up. Over this goes a large box of vanilla pudding, again mixed according to the package directions. Let it set about 5 minutes, so it doesn't mix with the coolwhip. The rest of the coolwhip goes next. Smooth out and cover with the last layer of graham crackers/vanilla wafers. Keep them whole again this time. You want to completely cover the whipped cream as much as possible. Put into the freezer for 20-30 minutes until Whipped cream is kind of hard. Now for the best part....Take a tub of chocolate frosting and put it into the microwave, (Don't forget to take off the aluminum foil wrapper) for about 1 minute. It needs to be really runny, but not so hot that the whipped cream melts. Pour this whole tub over the graham crackers/cookie layer. Put into the refridgerator and let set for at least an hour to allow icing time to firm up. Make sure you have milk to go with this.

I dearly love eclairs! I have never had an eclair cake. I will try this for sure. Thanks for the recipe. I always tweek recipes to make them my own too. That is the best way to get the exact flavor that you desire.Yummy, This does sound good.

I make it and take it church, and everyone loves it. One of the girls made it and took it for a dessert auction, and it brought $25! We were so excited.

I have used a recipe that is similar, and it went over so big that the food service director at the nearby college started serving it for desert. I had taken it to a coffee hour at church. It is a few layers less, and I make a fudge sauce for the top. It is really yummy. I also have never tried the vanilla wafers, but that gives me an idea, and an alternative.

That sounds absolutely delicious. I think I may have to try this one. It doesn't sound too hard either. Thats great that you and your daughters worked together to come up with your own version. It makes it more special. I'm sure my boyfriend will try and change this one to his liking too. Hes the cook in the family.

That's the good thing about baking and cooking. You can add and subtract ingredients, and make them your own, and most of the time, they end up better than they were in the beginning.

Oh dear goodness this sounds sinfully good!! I will certainly break my diet and try this! I could actually use fat free pudding and fat free coolwhip to help with the calories! Thanks so much for a great recipe!!

Yes,you could. I do this quite often. You can also buy Sugar free pudding that would cut down on the calories even more!

it is definately one of our favorites. Did you get a chance to try it yet? I'm thinking of trying it a little different next time, though I haven't decided exactly what I'm going to do yet.

It is one of our favorites, though my husband doesn't eat chocolate either. I have to make him some peanut butter cookies or something.
