New Catering job

I finally got another catering job. I've not been able to do it since I had back surgery. I will be cooking for a small Christian School's sports banquet...for about 50 kids plus their parents. I'm thinking of starting with loaded baked potato soup, and then making stuffed pork loin, wild rice, green beans, rolls and then finishing off with their choice of strawberry or chocolate mousse in edible shells made from white chocolate

Congrats! its always a delight to be able to feed people as a caterer. Your choie of dessert sounds really yummy. Just wanna know how long it will take for you to prepare all that?

I purchased all of my food the two days leading up to the banquet. I started cooking at 9:00 that morning. I finished up the last of the desserts about 15 minutes before the banquet was to begin. Just enough time to race into the bathroom, change out of my jeans and into a clean outfit that didn't have chocolate dripped down the shirt!

With menues like that you should be a big hit. It sounds celebratory and yummy. Tell us how to make the edible white chocolate shells, please.

I purchased a box of those cone shaped water cups that you can get with the water coolers. Spray them with non-stick butter flavored cooking spray. Melt White chocolate almond bark in the microwave and then using knife, you "paint" the inside of the cones with the chocolate. Let it harden, and then peel the paper cone off and you have a shell. If there is a hole in the shell where you missed with the chocolate, I simply put it back into a clean cone, and filled in the holes with fresh chocolate.

Congratulations to you ..Cooking is not a small job..It takes quite a talent to prepare the right amount of food and tasty at that..I wish I was going to your first dinner. Sounds like it would be a reall tasty spread:)+

It was very tasty. I had about a dozen mousse cups left. We packed them up and one of the sponsor's took them home. He had just raved over them, so I gave him what was left.

thanks for this. It went really well. My ham that went in my potato soup had been cured with some kind of red food coloring, and it turned the soup a pinkish color, but it was actually quite funny. Didn't affect the taste any.

Congratulations on getting another catering job. Can I come too, as the food sounds delicious. Potato soup is always popular, and the rest is suitable too. Good healthy food is ideal for a sports day. Good Luck.

thanks...I ended up getting two more jobs out of that banquet, so it was worth the time and effort I put into it for sure.

Are you sure that they would eat this? Did you offer a menu and let them choose? That is what I thought catering did. In any case, I am glad you back at a job and will make yourself some money. So important in this day and age sadly to say. I hope it goes well for you and that it leads to more gigs.

Yes, I sent several sample menus to the organization committee and they agreed on this one. I used a mixture of white, brown and wild rice and it made it so colorful. The kids loved it. The mousse was definately a hit.

congratulations, this sounds great - making me hungry, that is a lot of people to cook for but am guessing your experienced. The most I've ever cooked for is 50 and my sister and I did it together, was for our mom's birthday.

I love to cook and bake. The more people, the better in my opinion. I can cook for 200 almost as easily as I can for 6.

thank you for caring. It went really great. The kids had fun, the food turned out really good. I took my chocolate fountain and bought some different things for them to dip into it.

It was very good. We had a few small crises arise, but nothing that couldn't be handled. I got another job out of it, and made some great new friends.

Cogratulations I am expiring to start my own catering business and have started with doing my step-son's recption this Sunday I don't know if it will take off but I only want to do small events (this is a small wedding) so I hope it happens and again congratulations.
