Have any of you ever made your own cheeses?

We used to go to a pioneer village when I was a child, and once a year they had their cheese and wine tasting days. They would make the cheese the old fashioned way and show you how to make curds. The tasting, of course, was the favorite part. Have you ever made cheese? do you raise your own milk animals to do this? do you use raw milk? what kind of cheese do you make? where do you get your rennet?

No, but I would love to. The closest I have come to was to make my own yogurt. I got the recipe from an Indian colleague at that time - he said that Indians make their own yogurts (while I normally buy mine off the shelves) and it is so easy that I would try. In the end, it was a failed experiment and I was too lazy to make a second attempt. :P

oh no! you failed at making yogurt! what method did you use? you can make a simple cheese by putting your yogurt in a fine screened filter or cheese cloth placed in a funnel - setting it atop a dish - cover the top and keep in fridge, when the whey drains out of the yogurt you are left with a creamy low fat spreadable "cream cheese" like the neufchatel(sp?) cheeses at the supermarket.

i love eating food which contained cheese. My problem now is that there is a source that telling the muslim peoples that cheese is non-halal food as they said that the rennet sometimes made from pig which usually from camel, cow, and sheep. I really worry about this because i can't leave cheese food. So i did some research about cheese making and i found that most of the cheese products on the store are made from vegetarian rennet. and this makes me happy. I really want to make my own cheese but i just couldn't find the rennet. I am now searching for vegetarian rennet.
