Cheap potato skins

We all know those yummy things they call potatoe skins. Hollowed out potato fried topped with cheese and bacon and heated to melt cheese.
I have a quick, easy and above all CHEAP way to make them. When I peel my potatoes for any recipe... I peel well scrubbed potatoes a bit thicker than normal and freeze the peels. When I have a nice amount collected I toss them in hot oil for just a smidge. I drain, top with grated cheese and bacon crumbles. Then I toss them in the oven to melt the cheese.
So with a bit of care you can take something you would throw in the trash into something yummy! Something that costs a fortune at the restaurants!

i love potato skins thanks for the tip...i like to top mine with chopped green onion after the cheese is melted

What's bubble and squeak? I am going to assume you are from the UK?
Your way of hollowing them out is the traditional way. This is just a way to save some money if you are going to throw the skins out anyway.

Well as I said I do this WHEN I am peeling potatoes for another use. I wouldn't give up my baked potatoes!
You could always use the insides to make mashed tatoes or something.
