Do you keep fish heads and tails?

When you clean the fish, do you keep the head and tail? Are you more of the fillet person and you discard the head and tail? In my country, most of the people still keep the fish head and tail and cook the fish intact. What about you?

i keep both as it is useful to me. In m country the medium and big fish head are useful and peoples eat them. The best dish for the fish head is the fish head curry. Peoples who eat at the restaurant will ask for any fish head curry. I like the fish tail because when it is fried it will become crunchy and i like it. We add the fish some salt, turmeric powder, and some tamarind before fry them malay style. The steam fish also tasty if you could steam the head and the tail together.

certainly i keep the head and the tail but it doesn't matter to me too if i have to cut it out coz there are certain menu that you have to take out the head and tail.

I always go for the head, as what I heard from one of the customers from a restaurant where I use to eat at!;) I also liked it, but I do not like much of the tails because of the little torn that are in there. I prefer the big game fish and turn it into soups, like 'sinigang'!;)

I am really lucky that I do not have to clean the fish as I do not like the smell but love to eat it though :-). I get it cleaned we keep the head and the tail intact and cook in whole or sometimes make 2 pices of it one part the head and the other part the tail.
