Strange Cake for Veggie Haters

after a discussion i had with another mylotter (ZenDove are you reading???), i have decided to share a funny recipe for a chocolate cake which incorporates icky veggies for those who cannot or will not consume them anywhere else!as long as the person eating the cake has no clue there are vegetables in the recipe (ie: never tell them haha), they will never figure it out! this is especially cool because of the dark color of the cake...it hides the beet ingredient nicely ;) so zendove, or anyone else who has problems feeding their kids, hubbies, etc vegetables, try feeding them a dessert that they think is junky food, but only YOU will know there are veggies in there ;) if you follow this recipe, i suggest you blend the vegetables in a blender because it is not mentioned on the recipe instructions. you don`t want chunks of beets in your otherwise uniform chocolate. defeats the purpose of hiding the icky veggies lol. (and zendove, i have the rest of these magic recipes for you, my mom was all too pleased to share!)

Carrot cake is the one I love. My husband thought I was nuts until he tried it. Then he made two in one week. I also enjoy zucchini bread. It is a wonderful way to get the children to eat vegetables without a lot of fuss.

i love carrot cake.....and my mom's zucchini bread...mmmm.....i despise zucchini, but i'll et her zucchini bread by choice :) muffins are also a good way to hide veggies. to the untrained eye, "anything" can be explained away as being 'whole grains' LOL
